How to make pumpkin cake/cupcake tutorial

Hi there.=)

As promised ( and I'm kinda proud of myself for not forgetting to post this before halloween ) I already posted my tutorial on making the cute pumpkin toppers on my cake.

Too cute to spook...

Last week, I got an order to make a cake and 60 cupcakes for a corporate halloween party.

Good thing the kitchen's up and running.....ready to bake a SPOOKtacular cake!

I'm getting into the "spirit" of halloween.=)

Coming up with a good concept for the cake and cuppies was quite easy as there are a lot of sites that have great ideas.

Here's what I came up with....


The tombstone and sprung hand idea I got from the "Plants vs Zombies" game.

Ian ( who's starting to like molding fondant ) did the cake side with his idea of the city at night.


I love how it turned out....too cute to spook ( hence the post title )

Guess who else graced the party?
The Angry Birds!=)


Boy, they are really loved!  Young and old alike go gaga over these cute birds.=)
It's not surprising that the client wanted half of the cupcake order in angry birds theme.
Made so many of them that I lost count already.
Maybe I'll make a post about them next time.

All in all, it was a fun experience creating the Halloween cake and cupcakes.....I learned to make some of the toppers on my own.
Not to mention that Ian was there to help out.

We've so many things to learn and so many things to share.
So I'm sharing a tutorial on how to make the cute little pumpkins on my next post. ( Hopefully I get to post it before Halloween )

Baking hiatus

What's baking in your oven today?
I miss the smell of freshly baked goodies at home.  
Hmm...

Have'nt done much baking for a few days now.

Look at my kitchen....

That's Ian, my husband checking if the leak was fixed properly.

Repair is almost finished by now.

Hopefully I can resume the soonest as I have a halloween theme cake and cupcake order to make...=)

Chocolate

Who does'nt love chocolate?

I am a sweet tooth, so is Ian, my husband.  And we always crave chocolates.=)

And so for my first cupcake flavor, I decided to search for a chocolate cupcake recipe over the net.
So many to choose from.....so I tried some.....failed......tried again.....failed.....

Then I came across one recipe that had one different ingredient.
MAYONNAISE!.....was quite hesitant at first ( having seen a lot of recipes and it all had the same ingredients more or less ).

I never thought it can be used in baking, its always butter and eggs.  But a comment from the post said it was an ingredient in making "Portillos chocolate cake".

Time to put it to a test.....i secretly hoped THIS was THE ONE.

WOW!...it was delish!.....even without frosting.

Got it from Aikko of Bake Happy, the perfectly moist chocolate cake recipe.
Her Ma's recipe ( Thank you Ma! ).....it's heavenly.

PERFECTLY MOIST CHOCOLATE CAKE

2 cups cake flour
1/2 cup cocoa powder
1 tsp baking soda
2 tsp baking powder
1 1/2 cup sugar
1 cup mayonnaise
1 1/2 cup water
1 tsp vanilla extract

1. In a bowl, mix mayonnaise and sugar until smooth.
2. Combine flour, baking soda, baking powder, and cocoa.  Mix well.
3. Add a third of the flour mixture to the mayonnaise mixture.
4. Add 1/2 of the water required.  It will look sloppy at first but it will come together.
5. Repeat steps 3 and 4 until all flour mixture and water has been added to the mayonnaise mixture.
6. Add the vanilla extract last.
7. Pour in pan and bake at 350F for 40-50 mins for cake and 12-15 mins for cupcakes.

***tap the pan to let the air out before baking.

Was'nt able to take a picture before I frosted the cuppy.  But this is nicer compared to a naked cupcake.;)

Hello...

I have been planning to create a blog for as long as I could remember.
Guess, I just did'nt know what to blog about then.
Still don't know till now.=)

The title reads Cuppycakes & more...
Do I write purely about cupcakes?  Mostly...as some recipes (that are really that good) are meant to be shared.

I LOVE baking!...obviously...

I love learning new things about baking, there's this feeling of satisfaction when I create my cake.
When I see the design come to life, so rewarding.
It's therapeutic, I must say....

And I want to share what I learned, post some simple tutorials maybe...for newbies like me...

But allow me to inject a little bit about my life in my posts.=)

So join me in my journey....Let's learn together.
