I am a sweet tooth, so is Ian, my husband. And we always crave chocolates.=)
And so for my first cupcake flavor, I decided to search for a chocolate cupcake recipe over the net.
So many to choose from.....so I tried some.....failed......tried again.....failed.....
Then I came across one recipe that had one different ingredient.
MAYONNAISE!.....was quite hesitant at first ( having seen a lot of recipes and it all had the same ingredients more or less ).
I never thought it can be used in baking, its always butter and eggs. But a comment from the post said it was an ingredient in making "Portillos chocolate cake".
Time to put it to a test.....i secretly hoped THIS was THE ONE.
WOW!...it was delish!.....even without frosting.
Got it from Aikko of Bake Happy, the perfectly moist chocolate cake recipe.
Her Ma's recipe ( Thank you Ma! ).....it's heavenly.

PERFECTLY MOIST CHOCOLATE CAKE
2 cups cake flour
1/2 cup cocoa powder
1 tsp baking soda
2 tsp baking powder
1 1/2 cup sugar
1 cup mayonnaise
1 1/2 cup water
1 tsp vanilla extract
1. In a bowl, mix mayonnaise and sugar until smooth.
2. Combine flour, baking soda, baking powder, and cocoa. Mix well.
3. Add a third of the flour mixture to the mayonnaise mixture.
4. Add 1/2 of the water required. It will look sloppy at first but it will come together.
5. Repeat steps 3 and 4 until all flour mixture and water has been added to the mayonnaise mixture.
6. Add the vanilla extract last.
7. Pour in pan and bake at 350F for 40-50 mins for cake and 12-15 mins for cupcakes.
***tap the pan to let the air out before baking.

Was'nt able to take a picture before I frosted the cuppy. But this is nicer compared to a naked cupcake.;)
